Since 2021, 5th Quarter - led by owner/butcher Josh Turka - has provided access to high quality local meats by partnering directly with Vermont farmers with the goal of highlighting the farmers’ stewardship of their livestock and the land. Focusing on whole animal butchery and nose to tail utilization, the butchery and charcuterie offers fresh cuts of meat, a vast assortment housemade sausage and charcuterie made using Vermont raised beef and heritage pork. 5 Quarter’s robust wholesale offerings are widely represented on restaurant menus and in specialty food stores across Vermont and the Northeast.
